Healthy Baked Banana Doughnuts

For the past few days, I have wanted to bake something with bananas for George. These healthy baked banana doughnuts were the end result. As with all doughnuts, I expect you to go for seconds! 🙂 Since George is only 10 months old, I wanted to make sure whatever I made was healthy and not full of sugar. I tweaked a recipe I found on pinterest and came up with these.

Baked doughnuts are much healthier than their fried friends. You can also make most muffin mixes into doughnuts by baking them in a little doughnut pan. So much cuter than muffins, right? Take my warning though, once you start baking them, you will not stop!

These healthy baked banana doughnuts are made with whole wheat flour, coconut oil and honey. I cut the honey down by a quarter just so the dough wasn’t too runny. I also substituted Greek yogurt instead of sour cream. They came out super moist and delicious. You don’t even miss the sugar. 🙂 To top them off I made a brown butter honey glaze to pour over them when they are hot out of the oven. Yum! George was a big fan too!

I don’t know what it is but I have definitely been on a cooking spree lately. Remember these scones from a few weeks ago? Maybe it’s the free time I have during G’s nap time that makes me want to get into the kitchen. It is easier to cook while he sleeps than having him hang on my leg. 😉 These doughnuts only took 10 minutes to whip up. I hope you give them a try this weekend.

Healthy Baked Banana Doughnuts

1 Egg
1/2 Cup Of Honey
2 Tsp Of Vanilla
1/4 Cup Of Coconut Oil
1/4 Cup Of Greek Yogurt
1 Cup Of Smashed Ripe Bananas – I used 2
1 1/4 Whole Wheat Flour
1/2 Tsp Of Baking Soda
1/2 Tsp Of Baking Powder
1/4 Tsp Of Salt

Glaze

1 Stick Of Butter
3 TBSP Of Honey

Preheat the oven to 350 degrees.  Mix the egg, vanilla, oil, and honey together.  Add the yogurt and stir to combine.  Mix in the flour, baking soda, salt and baking powder.  Stir till combined.  Be careful not to over mix.  Grease a doughnut pan and pour in the mixture.  You can also place the mixture into a zip lock bag and cut open a corner.  You can then pipe the mixture into the pan.  Allow to bake for 13-14 minutes.

While doughnuts are baking, brown your butter on top of the stove and stir in the honey.  Drizzle the mixture over the hot doughnuts!
