Healthy Whole30 Chicken Salad

If you have ever dreamed of a healthy chicken salad than look no further!  The beauty of this salad is by removing the quinoa, you can easily make it whole30 approved.  Ya’ll it has become my go to.  I literally could eat the entire bowl of it.  I have made it both ways with quinoa and without.  I prefer it probably a tad more without, but some days I just want my salad to be a bit more filling so quinoa does the trick!  With the olives and sun dried tomatoes this salad is full of salty/sweet flavors.  I added kale to this particular one, but most times I make it with arugula. My FAV!

So far, I have managed to do decent with my healthy eating goals. The best thing for me has been taking Sunday afternoons and prepping healthy snacks. This Sunday I tried new protein balls made from dates and almonds with a little protein powder and chia seeds. My husband loved them and they have been such a great grab and go item for breakfast and a post workout snack. You can find the recipe in the Good To Glow cookbook.

Dressing:

2 tbsp apple cider vinegar
1 tbsp of fresh lemon juice
1 garlic clove minced
1/4 tsp of salt
1/8 tsp of black pepper
1/3 cup of olive oil

Salad:

1 cup of diced cooked chicken (alot of times I bake or grill mine!)
1 cup of baby arugula or Kale
1/2 avocado diced
1/3 cup sun dried tomatoes
8 kalamata olives pitted and chopped
1/4 tsp salt
1/8 tsp black pepper
OPTIONAL: 1 cup of cooked quinoa

Combine ingredients for the dressing then toss gently with salad mixture. Enjoy!
