Tuesday Talk: Quinoa Greek Salad

One of my January resolutions was to clean up my eating after binging on holiday sweets. Today, I wanted to share a quick and healthy recipe that I whipped up the other night. It’s has quickly become a weekly staple and only gets better as it refridgerates. This yummy quinoa greek salad is full of flavor from the olive oil/lemon dressing and from all the fresh flavors the mint and veggies bring. Let me know if you try it! Happy Tuesday!

**Quinoa Greek Salad**
1 Cup of Quinoa cooked (I cooked mine in chicken broth)
1/2 purple onion diced
1/2 cucumber diced
1/4 cup of chopped mint
1/4 cup of chopped parsley
15 grape tomatoes sliced in half
Juice of 2 lemons
5 Tablespoons of good olive oil
1/4 tsp salt
1/4 tsp pepper

Combine ingredients and refridgerate a couple of hours before serving. Enjoy!
