Crumbl Recipe: Salted Caramel Cheesecake
Like I mentioned earlier, during the Christmas season, I was itching to get into my new kitchen and bake. Cookies are a no-brainer during the Christmas season, but I wanted to bake something different than the standard holiday fare. I started diving on the web for a copycat Crumbl cookie recipe. There are so many yummy recipes from amazing bakers out there that you should never have trouble whipping up your favorite Crumbl cookie flavor. After I put the kids to bed early one night I pulled out the mixer and whipped these Salted Caramel Cheesecake cookies up.
The cookie base is a graham cracker cookie that is pillowy soft and super thick. It is the perfect base for the decadent cream cheese frosting. The cream cheese frosting is made from cream cheese, marshmallow fluff (this really helps the frosting keep the piping shape!), and powdered sugar. The frosting & drizzle is piped on with a simple plastic bag with the tip cut of. No fancy pastry bag is needed!
Ingredients For Salted Caramel Cheesecake Crumble Cookie:
- Butter
- Graham cracker crumbs
- Brown sugar
- Vanilla
- Eggs
- Granulated sugar
- Salt
- Baking soda
- Baking Powder
- Flour
Frosting Ingredients:
- Cream cheese
- Marshmallow Fluff
- Powdered Sugar
- Salted Caramel dip/sauce (I used sauce but the dip would have given it more of a defined line on top, my grocery store was out. The dip would be similar to what you dip apples in if that helps!)
- Coarse salt (optional if your sauce is already salted)
Can these cookies be frozen?
Yes! In fact, I just pulled one out of my freezer a few days ago and it was delicious!
How Many Cookies does this copycat Crumbl Recipe make?
If you are using 1/2 cup to measure out each cookie on your cookie sheet then this recipe will make exactly 1 dozen cookies. As I mentioned earlier, each cookie can be divided in half to make 24 servings total. I hardly think one person can eat an entire cookie in one sitting because of the large size and richness of it, but if you can, GO FOT IT! 🙂
Ingredients
- Graham Cracker Cookie:
- 1 1/2 cups salted butter softened
- 3/4 cup granulated sugar
- 1 1/2 cups packed brown sugar
- 2 eggs
- 1 tbsp vanilla
- 3 3/4 cups all purpose flour
- 2 1/2 cups graham cracker crumbs. You can crush your own up as well, the crumbs are just faster! 🙂
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- Cream Cheese Frosting & Drizzle
- 16 oz cream cheese room temperature
- 7 oz marshmallow creme
- 2 cups powdered sugar
- 1/3 cup caramel dip or salted caramel sauce
- coarse sea salt (optional)
Instructions
- Preheat oven to 350°.
- Cream together the butter, granulated sugar and brown sugar.
- Add the egg and vanilla. Mix until light in color and creamy.
- Add in the dry ingredients (flour, graham cracker crumbs, baking soda, baking powder and salt), mix into the dough. Mix until completely combined.
- Portion out the dough into 1/2 cup portions. Roll into a ball and arrange 6 onto each cookie sheet. Press down slightly on the cookie dough, flattening it until it is abotu 1 inch thick.
- Bake for 12-15 minutes, until the cookies are turning golden brown.
- Allow the cookies to cool on the pan for 5 minutes before transfering to ta wire rack.
- While the cookies are cooling, make the frosting by whipping the cream cheese until smooth.
- Add the powdered sugar 1/2 cup at a time, mixing until completely combined before adding more powdered sugar. Repeat until the full 2 cups of powdered sugar have been added.
- Add in the marshmallow cream and mixuntil all of it has been combined thoroughly.
- Add the frosting to a gallon sized zip top bag, cut the corner of the bag and use it to pipe the frosting onto the warm cookies in a spiral.
- Add the caramel dipp to a small zip top bag and cut the corner and zig zag the caramel over top of the frosting and then sprinkle with sea salt. Serve warm and Enjoy!
