Happy Monday friends! This past weekend, fall was definitely in the air. The weather cooled down dramatically here in New York and I even got to pull out my sweaters. I always jump at the chance to open my windows and allow the cool air to blow thru our home. Saturday morning was the perfect opportunity to linger in pjs and cozy up with one of our favorite breakfast in bed recipes. Can I just add here that the Baked Apple Doughnuts was the perfect recipe to welcome the fall like weather. George and I both loved snuggling in the warm faux fur blanket while we enjoyed a leisurely morning.
Fall to me, provides a chance to stop and enjoy life again. Whether it is pulling out your favorite candle or baking your favorite treat, I like to stop and take time to enjoy the season. One of my favorite parts of fall are all the delicious, fall recipes I get to bake. For me anything loaded with cinnamon is right up my alley. George is at the stage where he is loving the opportunity to help in the kitchen. We will not talk about the mess that he sometime makes! I am so glad though he is interested in helping me cook. We had a blast baking these delicious doughnuts for the weekend.
The Golden Malted waffle mix made the perfect base for creating these doughnuts. Apples are just coming into season here in New York. I was able to snag a bunch last weekend at the farmer’s market. Let me just say, the apples I have always bought in the grocery store do not compare with the ones I tasted here in New York. These delicious beauties were the perfect addition to my doughnuts. They baked so tender and sweet inside the dough. Once the doughnuts were baked we topped them with the Torani Chocolate Caramel Sauce and sprinkled them with powder sugar. Yum. Baked Apple Doughnuts
2 Cups of the Golden Malted waffle mix
1 ½ tablespoon ground cinnamon
¼ teaspoon ground nutmeg
¼ cup unsalted butter, melted and cooled
1/2 cup sugar
1/4 cup buttermilk
1/2 cup unsweetened applesauce, from jar
3/4 cup fresh apple, peeled and grated
Preheat oven to 375.
In a large bowl, whisk together, waffle mix cinnamon and nutmeg.
In another large bowl, stir together melted butter, eggs, sugar, buttermilk and applesauce. Stir in fresh apple.
Add 1/3 of the dry mixture to the egg mixture. Stir with wooden spoon. Add another 1/3 of dry mixture and stir. Add remaining dry mixture and stir just until combined.
Spoon batter into a large zip lock bag. Seal and snip the corner off one end. Squeeze batter into the cavities of a doughnut pan sprayed with non-stick baking spray. Fill each cavity 2/3 to 3/4 of the way full. To help donuts keep their pretty shape when baking, use a clean finger to gently even out the batter in each cavity and clean off the center knob of the pan. Bake at 375 for 12 to 14 minutes, until the tops of donuts spring back slightly when touched. Let cool 5 minutes before removing from pan.
Drizzle Torani Chocolate Caramel Sauce on top and sprinkle with powder sugar.
