Happy Wednesday y’all!  For this Wellness Wednesday post, I am sharing a copycat recipe for my favorite Emmy’s Organics  Cookies.  A few months ago I received the loveliest package from Emmy’s Organics.  Little did I know that they are located right here in the heart of Ithaca, New York.  This package was a way of them saying welcome to New York.  I quickly devoured the cookies in 1 day.  🙂  They are vegan and gluten free with no processed sugars.  Just the right little sweet to kick that dessert craving in the healthiest way possible.  For Father’s Day this year, I sent my dad a box of their goodies for him to try! I am excited to see what he thinks.

You can find these cute little Emmy’s Organics cookies in most grocery stores and Amazon.  I encourage you to try them.  If you however are on a budget like we are, paying 6 dollars for 6 cookies may be a stretch.  This budget life prompted me to get in the kitchen yesterday and play around with the ingredients I saw on the Emmy’s Organics cookie package.  Chris and I were both hankering for something sweet and trying to resist the urge to go buy ice cream!  These cookies hit the spot and kept us on the straight and narrow of healthy living. 🙂  They are also a lot cheaper to make and you will have a lot more than 6 in which to indulge.  Win.

These cookies require no mixer and I used a mini muffin pan to form them. After an hour in the freezer they were firm and good to eat. I have also heard of people using a dehydrator to “cook” them. My mom has a dehydrator and I kinda want to try using it when I am visiting home next month. I will be sure to report back the difference. For now the freezer works just as good. The best part about these vegan cookies is that the possibilites are endless as far as flavors go. Of course the main ingredients will stay the same but feel free to make lemon, chocolate, peanut butter or any other combination you desire. I look forward to hearing what you thing!     Okay, these sound SO good! I always love trying out healthy cookie recipes! I have seen Emmy’s Organics all over the place and have always wanted to try them. SO going to make these, thanks for sharing!

    Do you think I could make these and then ship them to my daughter at college? Obviously they wouldn’t be frozen, but the ingredients shouldn’t spoil in transit and she can freeze them when they get there. Is it just wishful thinking?!

      Hey! I think they would be perfectly fine to ship then she can chill them when she receives them!
