Whole30 Fajita Bowl

January is the perfect month to detox after the holiday season. For me, starting the Whole30 could not have come at a better time. After having George 3 months ago, I really needed motivation to loose my last few baby pounds and just eat clean for a change. Since becoming a new mom, take out has been way to convenient and by doing another Whole30 it got me back into the cooking mode. For me, half my battle is just getting into the kitchen.

For those of you that are not familiar with the Whole30, it’s a 30 day eating plan with no grains, legumes, dairy, alcohol, and sugar. The first few days are torture and I always crave everything that is bad for me! 🙁 After you get through the first week, it definitely gets easier.

Being a nursing mom this time around, I wanted to make sure I got in enough calories to keep my milk supply up, so I have had to make a conscious effort to eat even more than I did the last time I did the Whole30. Today, I’m sharing a favorite recipe, the fajita bowl, that I put together the last time I did this and it was one of my go to meals. It’s easy and super filling and I love the combination of the sweet and spicy!

Whole30 Fajita Bowl

4 Small Sweet Potatoes
1 Bell Pepper
1 Onion
1 Poblano Pepper
2 Chicken Breast Cut Into Strips
Juice of 2 Limes
1 TSP Cumin
1 TSP Chili Powder
1/2 TSP Salt
1/2 TSP Pepper

Guacamole
2 Avacados
2 Cloves of Garlic
Pinch of Salt
1 TBSP of chopped Cilantro
1 Tsp of Lime Juice

Combine the peppers, onions, spices and chicken and cook in a hot skillet until cooked through. Boil the sweet potatoes until tender and mash them. They will be the base of your bowl. While the chicken continues to cook, mix up your favorite guacamole recipe, mine is listed above. When your chicken is finished, top the mashed sweet potatoes with the fajita mixture and then with the guacamole and your favorite salsa. Enjoy

    Yummies!!! I’m going to try it!! Getting good fats from the avo is important for milk quality too! Go girl! I need to get on the band wagon.

      I have def found eating lots of almonds and avacados really help!! xo
