Veggie Pizza

One of my favorite things to do on a Friday night is to make homemade pizza and watch a movie. There is nothing better after a long week than unwinding with a good meal and some down time. Since pizza is the perfect meal for the weekend, I thought I would share my favorite way to make a veggie pizza. I’m not gonna lie, a whole wheat crust sometime is just so dry and I really do not like the store bought ones as much. This crust didn’t turn out the best so I’m still on the hunt for that good crust recipe. If you have one please share! Other than that I love my pizza packed with veggies! This is one meal that I can pig out on! There is nothing better in my opinion and it is so full of flavor! Enjoy!

**Veggie Pizza**

Whole Wheat Crust
1 Bell Pepper diced
1 Purple Onion diced
1 Jar of Artichokes
2 Tomatoes sliced
20 oz of Frozen Spinach cooked
1 Jar of Mushrooms (I also use fresh ones sometime too!)
1/2 cup of Parmesan Cheese
1/2 Tablespoon of Red Pepper Flakes
1/4 Tsp of salt
4 Tablespoons of Olive Oil

Chop all the ingredients. Mix the Olive Oil, Salt, Red Pepper flakes and 1 Tablespoon of the Parmesan Cheese together. Brush this mixture on the crust. This is your base instead of a marinara sauce. Top with veggies and cheese. I like to sprinkle a little salt on top too! I cook my pizza on a pizza stone to insure the crust gets nice and crispy. Bake at 400 degrees for 40-45 minutes.
