Cranberry Almond Granola

One of my go to breakfasts on busy days is homemade granola either with yogurt and fresh fruit or a little almond milk and fruit. It’s easy to throw in a container on my way out the door. Store bought granola is so full of sugar, so I often opt to make mine with maple syrup or agave nectar and stock it full of fiber rich nuts and flax seeds. Today I’m sharing my favorite Cranberry Almond Granola recipe! It’s the perfect breakfast to try this weekend! Enjoy!

2 1/2 cups of oats
1/2 cup of chopped almonds
1 Tbsp of flaxseeds
1/2 Tsp of Cinnamon
Pinch of salt
1/4 cup of coconut oil
1/2 cup of maple syrup or agave nectar
1 Tbsp of Vanilla extract
1/4 Tsp of Almond extract
1/4 cup of dried cranberries

Preheat oven to 300 degrees. Combine dry ingredients. Mix together oil, syrup and extracts and stir into the dry mixture. Make sure it is coated well. Add cranberries and spread onto a greased baking sheet. Bake for 45 minutes and stir every 15 minutes. Enjoy!
