Considering that it is National Meatball day, I thought it would be appropriate to share my new favorite meatball recipe. A few weeks ago, Rao’s specialty foods sent me a giant box of fabulous goodies. I simply could not wait to try all of them. I immediately began to create recipes in my head of everything I could coat in their delicious red sauces. One of the beautiful things about Rao’s sauce is that they use the fewest ingredients as possible to create their delicious sauces. The quality is on point and taste like you just whipped it up yourself. If you are looking to spice up your normal dinner routine, I came up with this Lasagna inspired meatball recipe. It is super fast (especially if you already have pasta cooked!). This meatball is everything you love about lasagna except the time involved in layering that dish!
I grabbed a pound of the Italian seasoned ground turkey at the store to add to the flavor of this dish. The beauty of it, is it is an all in one dinner. Throw in a side of veggies or a salad for bonus points. The meatballs are super moist because of the 1 1/2 cups of ricotta cheese in them. They literally melt in your mouth. George can sometime be a that typical picky 1 year old eater, but not with these! He gobbled them up in no time. I was really impressed with the quality of Rao’s pasta sauces. The marinara sauce paired perfectly with these meatballs.

1 pound of Italian Seasoned Ground Turkey
1 tsp of salt
1/4 tsp of pepper
1 1/2 cup of ricotta cheese
3/4 cup of Parmesan cheese
1 tsp of dried basil
1 1/4 cup of bread crumbs
1 cup of noodles (I used egg noodles, but any small noodle would work!)
1 tbsp of dried parsely
1 cup of Rao’s Marinara Sauce
Combine the turkey, eggs, salt, pepper and 1/4 cup of bread crumbs and marinara sauce. Mix together well. Add your ricotta and parmesan cheese with the basil and parsley. Finally add your noodles and combine all the ingredients. Spray a baking sheet with PAM and preheat your oven to 375. Add the one cup of bread crumbs to a new bowl. Roll your meat mixture into large meatballs and coat with the breadcrumbs. (I rolled mine in the crumbs.)
Line the meatballs on the baking sheet and bake for 30 minutes. I then transferred mine to a 9×13 baking dish and spread the Mozzarella cheese on them and topped them with the remaining sauce. Bake an additional 20-25 minutes. Enjoy!
