Happy Tuesday everyone! I hope your week is off to a great start.  As we approach the Thanksgiving holidays, I wanted to give you an easy meal idea with this Instant Pot Chicken Pad Thai.  This has become one of our favorite quick dinners at our house.  I am game to try anything in my Instant Pot these days.  Most evenings, Poppy is pulling on my leg as I try to cook so the less time I spend in the kitchen the happier she is.  Unfortunately, everyone else has to eat! 🙂  Since buying our Instant Pot last year, I have made roast, chili, lentil soup, red beans, and rice, and many more family meals.  I love that I can have a hot meal in a matter of minutes.  If you do not own an Instant Pot, I suggest that you find yourself one on one of the many Black Friday deals going on right now.  

This Instant Pot Chicken Pad Thai is bursting with flavor and the noodles just soak up all the yummy taste.  I have used brown rice noodles in this and also egg noodles.  Either is good.  I will say that the brown rice noodles needed a little extra time cooking and a bit more broth.  If you are a Thai noodle lover then you will really love this dish.  Feel free to add steamed broccoli with it for a little extra veggie!

Speaking of Thanksgiving, what are your plans this year?  For us, it will be low key and spent at home.  My in-laws will be here so we will have the traditional Thanksgiving spread and enjoy family time at home.  Typically we have gone to the beach in Destin in prior years but with everyone’s schedules this year we are stay put.  I look forward though to heading home for Christmas in a few weeks!  Let me know if you give this Instant Pot Chicken Pad Thai a try.  If you have lots of leftover Thanksgiving Turkey then I am sure you could adjust the cooking time and throw that in as a meat substitute!  Thanks for stopping by!
